Aromatic varieties are used in the making of essential oils. The culinary varieties are used in cooking and are an essential ingredient in many SE Asian dishes. Especially in Thai, Malaysian and Vietnamese foods, lemon grass is used a lot in flavoring sauces, soups, dips and even in fried dishes. |
