Cumin was originally from west Asia, perhaps most famously in Indian and what is now Eastern Chinese cooking. Currently, it is used quite a lot worldwide in Mexican, Western, Indian, Malaysian, Chinese and many more cuisines. Cumin is well suited for curries and thick sauces but is aslo great rubbed or sprinkled on many meats. The key with good cumin is to roast it just prior to cooking, to let the flavor really explode and transform the dish. When frying or BBQing, the cooking acts as the roast and the flavors should explode in similar ways.
