Mustard is one of the oldest, most widespread condiments in current human use. Yellow mustard is considered the mildest of all the mustard sauces and is the common spread used on sandwiches, hotdogs, burgers etc. in western cuisine. Due to yellow mustards primarily white mustard seed base, its mild toned down pungence and bitterness lends well to blending with other ingredients to make other sauces and marinades.

Note: Depending how one prepares Spice Chasm's Yellow Mustard will determine its heat and pungency. If you prefer a hotter, more bitter mustard, use cold water or beer as the liquid base. If a more mild mustard is preferred use hot water with vinegar to tone down the heat. Allow a few days for the bitterness to become more mild. Mustards typically become less sharp with age.

How to prepare Yellow Mustard Sauce

- Add 52g/ml water

- Add 45ml white vinegar

- Add 1 jar (45g) Spice Chasm Yellow Mustard Spice Blend

- Mix Well

- Heat on low heat for 10 minutes, while stirring, until it begins to simmer

- Let cool

- Store in fridge for 1-2 days to allow bitterness to mellow

Mustard is bitter in nature. If you prefer a stronger bitter flavor, use room temperature water and don't simmer as long. Fresh Mustard Sauce is more pungent and bitter than aged sauce. The longer it ages, the milder it becomes. Keep refrigerated after mixing.

Feel free to experiment with different vinegar types (apple cider is nice) or sweetness via adding sugar or honey.
