Nopal is a vegetable used in Mexico and has a quite distinctive texture. Nopales are from a few species of cactus which grow large flat pads. Spines are removed and prepared for cooking. If one likes the slimy texture of okra, this is a vegetable you might like. Think of them as a big plant steak. Excellent pickled and added to tacos, burritos, rice etc.
