Sage is absolutely one of the most underated herbs here in Taiwan. It has an intense flavor punch that wows and confuses the best of us the first time we rub the leaves between our fingers and have a smell. Even though sage is predominantly used in western cuisine such as pasta and.cheese dishes, it actually pairs amazingly well with many of our favorite Taiwanese igredients.

Sage is is often used in chicken, fish, egg, lamb and certain organ meats such as liver. All of which are exceptionally well suited to Taiwanese dishes.

Interestingly, sage is also well worth experimenting with other local favorites such as honey, bean, duck, asparagus, pumpkin and even pineapple! There are so many uses for sage, it boggles the mind. Once we have come accustomed to this herbs flavor profile in nearly all of our meals, we like to reminisce about our first whiff of the herb thinking what on earth would we use this in? As it turns out, nearly everything!
