Sage is is often used in chicken, fish, egg, lamb and certain organ meats such as liver. All of which are exceptionally well suited to Taiwanese dishes. Interestingly, sage is also well worth experimenting with other local favorites such as honey, bean, duck, asparagus, pumpkin and even pineapple! There are so many uses for sage, it boggles the mind.
