Dioscorea , true yams, are often confused with sweet potatoes (Ipomoea batatas) which are a species ofmorning glory. Purple yams are the most magnificent shade of purple around. The plant forms a large edible tuber which can be eaten as a cooked vegetable or used as a food coloring. The purple yam is used in many dishes, especially in east Asia.
